Okinawan Sweet Potatoes

We purchased Okinawan sweet potato slips in 2016, and have kept them going every year since.

We originally bought Okinawan sweet potato slips from Baker Creek Seeds because Sarah read that they were a common staple food in a ‘blue zone’, which are regions where people routinely live longer than the average life expectancy.

Their purple color is due to the high level of anthocyanins, which offer antioxidant benefits. 
‘Slips’ sprouting from the top of our Okinawan sweet potatoes for this summer. Once the slips are at least 6″ we pull them off and place them in a seperate jar of water, which allows them to form roots. Once they form good roots they can be planted out. This entire process takes about 6 weeks minimum.
I just used the last of our 2022 Okinawan sweet potatoes in a Tunisian stew…so yummy 😋.
