Fall Garden Harvest

We have already had our first frost, but a really hard killing frost is coming soon. So, it’s time to harvest our peppers, ginger, turmeric, sweet potatoes, and parsnips. We still have kale, cabbage, broccoli, cauliflower, garlic and onions that we will be overwintering to harvest in the Spring.

The cold weather strains of shiitake mushrooms that we inoculated into oak logs are starting to fruit.

Ginger rhizome! Very colorful when fresh. We cut most of the ginger and turmeric into thumb sized pieces and freeze them.

We use a lot of ginger in smoothies and Asian recipes….it’s great for teas too. We harvested about 19 lbs this year.
