We love to eat BLT sandwiches and have been looking for a good plant based alternative to bacon. Here is our current favorite made from eggplant. The finished bacon freezes well although it will lose its crispiness when thawed.

Eggplant Bacon Recipe
Line a large baking sheet with parchment paper
Cut eggplant into long thin strips. Thinner strips will be crunchy, but cook quickly. Thicker strips will not be as crunch, but less likely to burn.
Make the marinade by combining the olive oil, soy sauce, maple syrup, paprika and liquid smoke in a small bowl.
Place the eggplant strips into a large flat Tupperware and pour the marinade over. Put the lid on the Tupperware and turn over or gently shake to coat eggplant. Let them sit for 30 minutes.
Place the eggplant on the parchment lined baking sheet in a single layer and season with black pepper.
Bake for 25-30 minutes until starting to get crispy. If you cut your slices thicker then you may need to bake them for up to 50 minutes.
