The Secret To Easy Peeling Hard Boiled Farm Fresh Eggs

We have been trying different ways to hard boil our fresh eggs so that they peel easily. We’ve tried adding vinegar to the water, dunking them in ice water, using a steamer basket, and just letting the eggs sit in the fridge so they ‘age’ a few weeks before hard boiling them. None of those techniques have worked as well as we would like.
We just recently bought an Instant Pot and thought we would use it to hard boil eggs. It works amazingly well. Some of the Instant Pot models have an egg program specifically for hard boiling.

 For easy peeling farm fresh hard boiled eggs here is how we do it:

1. Collect your eggs everyday, but instead of washing them and putting them in the fridge, just set a dozen clean, but unwashed eggs on the counter letting them sit for a week.
2. Place 1 1/2 cups of water in the bottom of the pressure cooker. Add a teaspoon of vinegar to the water. Place the steamer trivet in the bottom of your Instant Pot. Place one dozen eggs on the trivet.
3. Close the lid and set your Instant Pot for 5 minutes on the High Pressure Cooking setting.
4. Once the 5 minutes is up, quick release the pressure using pressure release valve. (follow your pressure canner’s manual for quickly releasing the pressure).
5. Immediately place the eggs in ice cold water using tongs or a slotted spoon.
6. Once the eggs are cooled after a few minutes you can start peeling. That’s it…they should peel perfectly.

We use the steamer trivet that came with our Instant Pot.
Amazon.com sells special racks specifically for eggs, but they aren’t really necessary.
